Mizu - A taste of the Mizu Menu - Salmon & Fig recipe

Ingredients (serve 4)

400g fresh salmon fillet
100g piece each
4 fresh ripe figs
100g wild rocket
20g crushed walnuts
200ml tofu dressing

Method

  • Sprinkle salt on fish fillet and leave for 10 minutes
  • Grill salmon for 10-15min
  • Place wild rocket on plate
  • Cut fig into 6 pieces and place around the rocket
  • Sprinkle walnuts and apply dressing ( below)
  • Place grilled salmon on top to serve

Tofu dressing

1 piece of firm tofu
1 tbsp miso
100ml ponzu
50ml soy
50ml oil
20ml mirin
50g sesame seeds
1tbsp sugar
1tsp salt
1tsp garlic
1tsp ginger

Method

  • Wrap the tofu with kitchen paper and heat in microwave for 1min.
  • Cool down in the fridge - his takes excess moisture from tofu.
  • Mix all ingredients in food mixer to make a smooth sauce.

All classes are conducted in a relaxed and friendly atmosphere by Chef Soichiro Chaki. A maximum of 6 students per lesson enables participants to receive one on one tuition from Chef and to get 'hands on' in the kitchen.

You've been amazed by the presentation and taste of the world famous Japanese dish- Sushi. It may look simple, but Chef will teach you the finer points of preparing and presenting this Japanese delicacy. At the conclusion of the lesson relax over lunch.

Bookings are essential and class confirmation upon full payment.
