In July, over three days, Mizu will be celebrating its 5th Anniversary.!

On Friday the 16th of July we will have special Sake tasting night and a Sake workshop on Sunday the 18th with Mr Philip Harper(right), currently the master brewer at the Tamagawa brewery in Kumihama, Japan.

He is the first foreign-born person to earn the title of toji (brewer) in that country.

Also on Saturday night 17th of July, Mizu will hold a traditional Maguro (Tuna) cutting show featuring Mizu's Sydney gourmet fish supplier, Wellstone.

Sake Tasting Night with Philip Harper
Friday 16th July 2010

Philip Harper is the only Westerner to ever hold the position of Master Brewer in a Japanese sake brewery. His career in the notoriously exacting world of traditional brewing has been described as ‘miraculous’ by a specialist writer. As the creator of the Tamagawa sake range, he has become known for brewing in a kaleidoscopic range of styles, from award-winning fragrant Daiginjo to the ‘spontaneous fermentation’ series which are brewed in pre-modern
fashion without using pure yeast cultures.

In the off-season, he spreads the word about sake’s pleasures, speaking regularly to industry and consumer groups in Japanese and English, in Japan and overseas. He is the author of numerous articles and two books on sake.

MIZU have invited Philip to Australia
especially for this one off event. If you like sake or are interested in learning about sake from a true master then this night is for you.

Tuna Filleting Show and special dinner

Sydney based seafood wholesaler Narito Ishii from Wellstone Seafoods will demonstrate the time honoured way to fillet a whole tuna for sashimi.

Mr Philip Harper will conduct a special sake workshop at MIZU.
Mr Harper will explain and demonstrate the ancient sake brewing process he uses at his brewery in Japan. A night not to be missed for sake aficionados.

All classes are conducted in a relaxed and friendly atmosphere by Chef Soichiro Chaki. A maximum of 6 students per lesson enables participants to receive one on one tuition from Chef and to get 'hands on' in the kitchen.

Youfve been amazed by the presentation and taste of the world famous Japanese dish- Sushi. It may look simple, but Chef will teach you the finer points of preparing and presenting this Japanese delicacy. At the conclusion of the lesson relax over lunch.
